The cashew nut is actually a seed which grows on the bottom of the cashew fruit. The seed is then carefully removed from the caustic resin (known as cashew balm) in the interior of the seed before it is made fit for consumption.
Cashews are lower in fat content than most other nuts and approximately 75% of their fat is unsaturated fatty acids. The monounsaturated fat content of cashews makes them a very heart healthy way of getting fat in your diet.
Ready to eat on their own, cashews are also terrific with other nuts and great as a garnish in many ethnic dishes.
Culinary uses: Cashews are a common ingredient in Asian cuisine. Often, they are added to dishes shortly before coming off the heat. It is common to serve cashew along with chicken, shrimp, vegetables and other foods.
Cashews can also be processed into cashew butter, with similar uses to peanut butter.
