The shitake mushroom takes its name from the tree on which it traditionally grows. In Chinese, it is called xiānggū and sometimes referred to as the Chinese black mushroom.

Shiitake mushrooms have many uses in Chinese and Japanese cuisines and have a very deep and rich flavor.

These dried Shitake mushrooms are of the Chinese huâgû ("flower mushroom") variety. They are dried and stemless, ranging from 4 to 6 cm each.
